JD’s Brunswick Stew Recipe is Perfect for Winter!

This recipe is courtesy of my double-first cousin, Ed Davidson. I just made it this weekend and it’s delicious!

Ingredients:

  • 1 quarter lb. salted butter
  • 1 large finely diced sweet onion
  • 1 teaspoon cayenne pepper
  • 1 tablespoon salt
  • ¼ cup Worcestershire sauce
  • 1 teaspoon freshly ground pepper
  • 2/3 cup vinegar bbq sauce (Johnny Harris) and 2/3 cup sweet bbq sauce (Stubbs – Sweet & Spicy)
  • ½ to 1 whole smoked pulled pork butt (6 lbs)
  • 1 whole smoked chicken pulled
  • 2 28 oz cans of crushed tomatoes
  • 3 14.5 oz cans of dices tomatoes
  • 4 or 5 14.5 oz cans of whole corn (drained)
  • 3 14.5 oz cans of cream corn
  • 2 quarts or more of chicken broth

Directions: Melt the butter in a large pan over medium heat.  Add the diced onion and sauté until the onions are translucent, about 15 minutes. Stir in the cayenne pepper, salt, black pepper, and Worcestershire sauce. Simmer 5 minutes and then add the vinegar bbq sauce and the sweet bbq sauce. Add the crushed and diced tomatoes and the corn. Stir in the chicken broth and simmer over medium heat. When the stew is hot add the pulled pork and pulled chicken and simmer for at least 2 hours.

Some people add 1 lb or more smoked beef brisket and a couple of cans of lima beans, but I don’t…IMPORTANT…Remember…Additional salt, black pepper, cayenne pepper can always be added after you have simmered the stew for a while but if you put too much in at the start you can’t take it back out!

Note: The vinegar bbq sauce will be light in color, the sweet will be dark. Brand doesn’t really matter, whatever your preference.

Cooking – Pork and Chicken:

I take Boston Butt Pork Roast of about 6 lbs and rub with a dry rub like “Butt Rub”. Same with large chicken. I put on smoker for 2 hours. Chicken will be done in that timeframe (180 degrees internal temp). Wrap Boston Butt in heavy duty foil with 1 cup of bbq sauce and tablespoon of apple cider vinegar. Bake at 300 degrees for 3-3.5 hours. Bone will fall out and meat will shred for stew.
